Bring Back the Potato

Bring Back the Potato

November 8, 2007

The low-carb craze has left the potato a little misunderstood. A medium-size potato with the skin contains only about 100 calories and is a great source of vitamin C, potassium and fiber. What’s more, there is now evidence that potatoes contain phytochemicals, which are nutrients that are being studied for their role in protecting us from diseases, like cancer and heart disease.

Here are some tips to bring back the potato and give it the dignity and respect it deserves:

  • Baked potatoes are great with a lot of different healthy ingredients — try topping with salsa and low-fat cheese; chopped broccoli and low-fat cheese; a vegetarian chili.
  • If you just want sour cream, try the low-fat version. Low-fat or fat-free yogurt can be used instead of sour cream, too.
  • Try different varieties of potatoes.
  • Use potatoes in stews and soups to add some thickness and texture.
